Pioneer Woman's Crash Hot Potatoes

With our chicken the other night, we had Pioneer Woman's Crash Hot Potatoes.  Before I get to the potatoes, I have explain a little more who this Pioneer Woman (PW) is.  Several years ago, a friend introduced me to the world of blogging by sending me to a site called The Pioneer Woman.  This was a city girl living in the country, telling stories about her life on the ranch, sharing recipes that she cooked for her family, and offering insight into the world of photography.  Her website now has tens of thousands of followers, and continues to entertain and encourage people across the county.  I have made many of her recipes, and have loved every one.  I hope that you will enjoy them as much as I have.

Now on to the potatoes....



6 small red potatoes
Olive oil
Sea salt
Pepper
Rosemary (or other herb of choice)


1. Cook the potatoes in a pot of boiling water until they are fork-tender.
2. Line a sheet pan with a silicone baking mat, and generously drizzle with olive oil.  Place the cooked potatoes on the sheet, leaving room between each potato.
3. With a potato masher, press down on each potato until it slightly mashed. This step might be a little messy, and the potatoes might fall apart a little bit, but keep going it's worth it.
4. Drizzle the tops of the potatoes with more olive oil.  Sprinkle with sea salt, black pepper, and dried rosemary. I used rosemary, and it was delicious, but any herb you have on hand, fresh or dried, will work - thyme, chives, etc.
5. Bake at 450 for 25-30 minutes until golden brown.
