Peanut Butter Pie

Here is a quick, delicious recipe for peanut butter pie.  With the help of my dear friend, Shallin, peanut butter pie was on the agenda for girl's night.  This recipe is adapted from Pioneer Woman's chocolate pie recipe.  It is also super good - I would recommend making one peanut butter and one chocolate.  I do have to warn you that this recipe does contain raw eggs, so make sure you buy them from a source you trust... preferably from local, free-range chickens.


2 sticks regular butter, softened
1 1/2 c. sugar
1/2 c. peanut butter 
1 t. vanilla
4 eggs
1 baked pie shell

1. Beat butter and sugar together until light and fluffy, then mix in peanut butter.
2. Add the vanilla and mix.
3. Turn the mixer to medium and then add one egg, mixing for 4-6 minutes.  Add the remaining 3 eggs, one at a time, beating for 4-6 minutes after each.
4. Pour the mixture into a cooled pie shell.  Refrigerate for at least two hours before serving.
5. Serve with homemade whipped cream on top.

For the chocolate pie, substitute 4 ounces of melted chocolate (cooled before adding to the butter/sugar mixture) in place of the peanut butter.

  2. I tried this recipe yesterday - only I used almond butter. Also very good!!!
