Greek Chicken Pitas

Here is a quick and easy recipe for a weeknight meal.  You can do most of the preparation in the morning before work, and then pull it all together when you get home.  We had it for dinner tonight for the first time and really enjoyed them. I hope you like them too!
 


  
Greek Chicken Pitas

2 chicken breast pieces
4 t. Greek Seasoning (I used Pampered Chef)
3 T. olive oil
1 c. plain yogurt
1/2 cucumber, diced
1/2 yellow onion, diced
Juice of 1 lemon
Salt and pepper to taste
Diced tomato
Feta cheese
Pitas

1. Rub down both sides of the chicken breasts with olive oil, and season both sides with the Greek Seasoning.  Wrap the chicken in plastic wrap and refrigerate for several hours.
2. To prepare the dressing, mix together the yogurt, cucumber, onion, lemon juice, salt and pepper.  Refrigerate until ready to use.
3. When you're ready for dinner, grill the chicken.  Let sit for a few minutes before slicing into strips. 
4. To assemble the sandwich, place several spoonfuls of the yogurt sauce into the bottom of the pita.  Add some tomato and feta cheese, and finally the chicken.  Following the recommendation of the original recipe, I served with roasted potatoes.  They are tasty on their own, and even better with some of the extra sauce.
