We have fish around here 2-3 times a month... it's good for you, and it breaks up the cycle of pork and beef. I have tried several different ways to prepare it. Fried with tartar sauce is my favorite, but this is a close second. I usually buy tilapia when I buy fish, but any white fish (such as cod or haddock) would work in this recipe. To complete the meal I served a rice and broccoli pilaf on the side.
Parmesan Lemon Pepper Tipalia

1/2 c. Parmesan cheese
1/4 c. butter, softened
3 T. mayonaise
2 T. fresh lemon juice
1 T. lemon pepper seasoning (more or less to taste)
4 tilapia filets
1. Preheat the oven's broiler. Line and grease a cookie sheet with aluminum foil.
2. In a small bowl, mix together the Parmesan cheese, butter, mayonaise, lemon juice. Add in the lemon pepper seasoning and mix well. Set aside.
3. Arrange filets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the pan from the oven and cover the cheese mixture. Broil 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to overcook the fish.
