Drip Beef Sandwiches

Here is a quick and easy slow cooker recipe for a basic drip beef sandwich.  No photos this time... I was hungry and forgot to take one.  You'll have to trust me, it's a tasty sandwich that is simple to put together in the morning, and will be ready to eat when you get home from work. Drip Beef Sandwiches
Adapted from The Pioneer Woman, Basic Drip Beef

1 2.5 pound to 4 pound chuck roast
1 whole large onion, sliced
3 cloves of garlic, minced
1 c. sliced white mushrooms (optional)
1/2 c. soy sauce
1 c. cooking sherry
1/2 t. salt
4 c. water 
Buttered, toasted sub rolls
Sliced provolone cheese


1. Place onions in the bottom of a slow cooker.  Set the chuck roast on top of the onions.  Add all remaining ingredients.  
2. Cover slow cooker and cook on high for 5-6 hours, until the beef is fork tender and falling apart. Shred meat with two forks until all large pieces are broken up.
3. Serve on top of the toasted rolls with the sliced cheese.
