Tortellini Soup

Tonight was Sunday soup for supper.  And Tortellini Soup was on the menu.  This is a great soup for a cozy winter meal.  It's so quick to throw together, and I'm sure you have most of the ingredients on hand, you'll have a weeknight dinner on the table in no time.  Topped with grated Parmesan cheese and a side of crusty bread, this soup is hard to beat.  Speaking of bread, my resolution to learn to make bread is going very well.  I will be working on the post this week, so stay tuned.  Learn how to make bread this way, and you'll never have to buy it at the store again. It has changed my life (dramatic, but true, at least in the bread department).

White Chicken Chili

Last weekend white chicken chili was our Sunday Soup Supper.  This is a slow cooker recipe, so with a little planning ahead, you will have a delicious meal waiting for you when you get home at the end of the day.  The recipe starts with cooked chicken and chicken stock.  If you really plan ahead, you can make your own chicken stock, and have the chicken ready for the soup at the same time.  Click here for directions on how to make your own chicken stock.

Baked Potato Soup

We're starting a new tradition at our house.  Every Sunday that we are home, and our schedule allows, we will be having soup for supper.  Not a crazy revelation, but it will allow us to enjoy some old favorites and try some new recipes.  This one for example, Baked Potato Soup, is a new addition to the soup section of my cookbook binder.  Delicious!

Cauliflower Soup

Nothing says fall better than a big bowl of soup.  Here's a delicious one I borrowed from Pioneer Woman.  Even if you're not a big fan of cauliflower, this one is worth a try.  Quick and easy to throw together, and don't forget the sour cream at the end, it brings it all together.

Ratatouille

Rata... what?  Ratatouille [rat-ə-too-ee] is a vegetable stew of Provence, typically consisting of eggplant, zucchini, onions, green peppers, tomatoes, and garlic, served hot or cold. Or it's a darling little rat in the popular animated Disney film.  This post is about the stew, not the rodent, although the movie is cute and I would recommend watching it sometime.  And it was the inspiration for trying this crazy sounding new dish.  If you are expecting a knock your socks off, best thing I ever had dish, you may be disappointed.  But if you are looking for a satisfying, flavorful way to use the bounty from your garden this summer, you should try this soon.

Laura's Chili

While Mother Nature is still trying decide whether is it winter or spring, you still have time to make up a batch of chili.  Here is the recipe that I use, I like it just the way it is, but can be adapted to your taste. The chili seasoning recommended will give the soup a little bit of a kick, so use a little less if you don't like so much spice.  Also, the brown sugar sweetens up the soup, a nice complement to the spice, but may be too sweet for some.  Use this recipe as a starting point, and then make it your own.

Honey & Butternut Squash Soup

My sister was giving me a hard time because I hadn't posted any new recipes this week.  Yes, it has been a busy week, enough time to cook, but not enough time to share.  I've missed you!  Here is our dinner from last night, a simple soup made from local ingredients... butternut squash purchased from a local farmer last fall and frozen, home canned applesauce and honey from a local beekeeper. Serve with a salad and some fresh bread for a cozy winter meal.

Pasta e Fagioli

Soup was on the menu this weekend, and I decided to make a special treat, Pasta e Fagioli.  After all it was our 8 month anniversary!  For those of you who have been to Olive Garden for "Soup, Salad, and Breadsticks" this recipe is exactly like theirs.  For those of you who haven't tried it before, please add it to your menu sometime soon.  This is an easy recipe, and very, very tasty.  The wine is optional, but highly recommended.

French Onion Soup

At the request of a friend, French Onion Soup was on the menu tonight.  I have a recipe I found several years ago... it's a copycat from Panera Bread, and some of the best French Onion Soup I have ever had.  And I will add my disclaimer here: it tastes really good because someone else came up with a good recipe, and I simply followed the directions, and then made a few minor adjustments. This holds true for most of my recipes. What makes this so tasty is the cheese and the homemade croutons.  Without them, it's just some onions in beef broth... not so tasty.
