Grammy's Banana Bars

Who doesn't like banana bread?  Okay, so maybe not everyone, but we all should agree that the best way to use up over-ripe bananas is to bake with them.  This recipe is a great alternative to regular banana bread, especially because it comes with a delicious cream cheese frosting.  Thanks to Grammy for sharing!





Grammy's Frosted Banana Bars

Bars
1/2 c. butter, softened
2 c. sugar
3 eggs
1 1/2 c. mashed ripe bananas (2-3 medium)
1 t. vanilla
2 c. whole wheat pastry flour or all-purpose flour
1 t. baking soda
pinch of salt

Frosting
1/4 c. butter, softened
1/2 pkg cream cheese (4 oz.), softened
2 c. powered sugar
1 t. vanilla

1. To make the bars, cream butter and sugar together in a mixing bowl.  Beat in eggs, bananas, and vanilla. 
2. Combine flour, baking soda, and salt.  Add to creamed mixture and mix well.
3. Pour into a greased 15" x 10" x 1" baking pan.  Bake at 350 degrees for 25-30 minutes or until bars test done.  Remove from the oven and cool completely.
4. While the bars are baking, make the frosting. Mix together the butter and cream cheese and then add the powered sugar and vanilla.  Beat well until smooth.  Spread over the bars.
