Ham and Potato Casserole




2 T. butter
1/2 medium onion, diced
2 cloves garlic, minced
1/4 c. green onion, chopped (white and light green parts only)
4 c. cooked and cubed potatoes (baked or boiled the day before)
1 1/2 c. white cheddar cheese, shredded, divided
1 c. sour cream
1 c. cooked ham, cut into bite sized pieces
salt and pepper to taste
 
1. Melt the butter in a medium fry pan, and add the onion, garlic and green onion. Cook over medium heat until tender.  Be careful that the garlic doesn't burn.
2. In a large mixing bowl combine the potatoes, 1 cup of cheese, sour cream, ham, onion mixture and salt and pepper.
3. Lightly grease a 1 1/2 quart baking dish, and transfer the potato and ham mixture to the dish.  Top with the remaining 1/2 cup of cheese.
4. Bake at 350 degrees for 30-35 minutes, until heated through, and the cheese is golden brown.

Serves 4.

Plan to make this yummy dish with some leftover Easter ham!
